Rum, Pineapple and Coconut Sponge Pudding




This is a baked sponge pudding with a rum and vanilla soaked pineapple fruity bottom and a light coconut whisked sponge top, decorated with chopped coconut pieces. It was served with ice cream flavoured with honey and grated fresh ginger.

The sponge was light and full of air. It baked to create an almost sauce at the base which added a little moisture to the filling. The sweet coconut topping complimented the sharp pineapple flavour. The vanilla and rum added another level of flavour, and the sweet yet spiced ice cream topped it off perfectly.
