Passionfruit Cake






This is a tropical seasonal cake of a genoise sponge made with light muscovado sugar, a lemon and vanilla cream cheese frosting and passionfruit, all topped with toasted coconut flakes.

The sponge is light and soft with a deliciously caramel hint from the sugar. The cream cheese is slightly savoury tasting and compliments the sweet passionfruit very well. The look of it is fabulous and the textures and tastes are lovely.
