Blueberry and Vanilla Meringue Cupcakes

These are some vanilla cupcakes with a blueberry and cinnamon centre and topped with a toasted italian meringue frosting.

They are light and flavoursome. The topping is like a cloud, although missing a little sugar which was left in the pan! Next time, I will make extra syrup to counteract this I think. I also decided a blowtorch is a better idea than the oven, however I will have to decrease my clumsiness before I can get one.
