Forest Fruit Queen of Puddings Tarts
These are some individual sweet pastry vanilla custard tarts topped with a forest fruits jam flavoured with orange juice and meringue peaks. This is my take on the traditional Queen of Puddings.
The pastry was crisp and perfectly baked, without a soggy bottom. The custard is just set, full of vanilla flavour and a lovely texture. The jam on top is sweet and fruity, contrasting the light custard. The meringue on top is delicious, although it could have required a little longer baking to dry it out. It is an excellent bake. Of course, some adaptations could be made, but I am very pleased indeed.
