Strawberries and Cream Wimbledon Mousse Cake





This is my take on the traditional Wimbledon afternoon treat of strawberries and cream. It is a genoise cake soaked in cointreau syrup filled with fresh strawberries and vanilla mousse. It is topped with strawberry jelly and decorated with more strawberries and fresh mint.

The genoise sponge is sweet, light and a perfect consistency. The strawberries have a beautiful flavour being some of the best I have tasted this year. The textures and tastes all come together wonderfully to make a lovely dessert.
