Blackberry, Mint and Lime Tart
I have made my version of a key lime pie with an addition of the Great British Summer. It is a shortcrust pastry case topped with blackberry jam, a mint and lime custard filling and topped with browned meringue made with mint infused sugar. The tart is decorated with blackberries, mint leaves and lime zest.
The pastry is short, crisp and well baked, with no soggy bottom. The jam is fruity and delicious and the lime custard is tart, tasty and compliments the sweetness perfectly. I am over the moon with how it looks, especially after a lot of indecisiveness!
