Apple and Raspberry Puffs





My mum's birthday dessert were some fruit puffs of a traditional puff pastry filled with apple and raspberry with a hint of lemon zest and sprinkled with demerara sugar.

The pastry came out beautifully light and crisp. The fruit flavour was sweet and soft, despite my forgetting to add extra sugar (it didn't need it for once!). And they were great. Not quite the turnovers I had planned as my pastry ended up rectangular not square. But ignoring that, they are fabulous!
