Marmalade Cake
I made my first cake using my sister's marmalade. It is a cake made with ground almonds, orange zest and marmalade. It is drizzled with orange juice and topped with more marmalade and chopped pistachios.
The cake is very light with a beautiful texture as a result of the ground almonds. The flavour is orangey and strong. The marmalade gave it a slight tang which needed to be mitigated by a little more sugar in the drizzle and sponge. Although, it seems this is a cake where the longer it is kept the better the flavour becomes.
