Coconut and Raspberry Macaroon Cake

This is a sponge cake base topped with raspberry jam and a coconut macaroon topping.

The cake rose well and is light and soft. The raspberry is sweet and fruity and the coconut macaroon topping is crisp on top and gooey inside. This is delicious!
