Lemon and Pistachio Shortbread Fingers




I made some shortbread fingers flavoured with lemon zest and filled with chopped pistachios.

The biscuit was made with butter rather than the normal margarine and so was even shorter, crumblier and richer than usual. The lemon and pistachio were summery and tasted lovely. I did re-bake some of them as they weren't quite as crisp and browned as they could have been but, using a new oven, I can forgive this!
