Salmon, Asparagus and Caerphilly Quiche





I've been baking for lunch at Wimbledon on Friday. I have made a quiche filled with asparagus, salmon, caerphilly cheese and topped with asparagus spears.

The pastry was crisp, although a little dry and so slightly cracked. It baked beautifully, however, with no soggy bottoms in sight. I did manage to spill the filling slightly when putting it in the oven to bake! The filling is summery, light and tastes great. This will go down very well on centre court!
