Apricot and Blueberry Crumble Friands





I've been using some seasonal fruits making some lemon and cinnamon friands filled with blueberries and topped with an apricot slice and a crumble topping.

The cake itself is light and soft. The fruit gives it a lovely sweetness. The crumble has more fat in than the crumble I previously made for my crumble cakes so it is a little more clumpy. It has a lovely crunch from the demerara sugar. I would perhaps bake them for another few minute to ensure the inside is cooked through due to the moisture of the fruit, and the blueberry flavour is fairly subtle but other than that they are great!
