Strawberry and Prosecco Eton Mess Mousses
This is dessert to celebrate New Year. It is a strawberry mousse flavoured with a little prosecco. It is topped with a quenelle of whipped cream, strawberry coulis and crushed meringues.
The mousse is light and fruity, being softly set so creamy. The crunchy meringue adds a textural contrast and an additional sweetness to the dessert. I think it looks elegant and special enough for New Year's Day.
