Peach Jam Doughnuts
As much as you can play around with the basic doughnut, it doesn't really get much better than a basic doughnut rolled in caster sugar and filled with jam. For the middle of these I have chosen to make a peach jam flavoured with a little lemon juice.
There isn't really much else to say other than, these are perfection. The dough is soft and light, risen for the ideal length of time and fried to golden brown to give the characteristic and loved doughnut flavour. The jam is full of chunks of fresh peach and so adds a refreshing lift to a bake that could otherwise be oily and sickly. I'm not sure quite how I resisting eating the whole batch at once!
