Raisin and Caraway Seed Skillet Cake
This bake is quite a simple one. It is a cake flavoured with caraway seeds and a pinch of nutmeg, filled with raisins and sprinkled with crushed caraway seeds and demerara sugar.
The cake is wonderfully fragrant, being full of delicious aniseed flavour. It is light and moist, despite being quite thin. Although it could be considered a bit boring, baking it in a skillet pan gives it a touch of charm that, I think, makes it fantastic.
