Cinnamon Roly Poly Pudding



This is my cross between a cinnamon bun ring and a jam roly poly. It is suet pastry filled with a dark brown sugar and cinnamon butter, then baked in vanilla custard.

The suet pastry is soft, light and has a wonderful texture. The cinnamon flavour is strong but not overpowering, and is perfect with the dark molasses sugar flavour. Baking it on the custard adds an extra special element that turns it from a basic jam roly poly style  dessert to something a little more interesting.
