Lemon and Clotted Cream Drop Scones
My love of baking pancakes has been used to make some drop scones. These are flavoured with lemon, with an addition of clotted cream. They are drizzled in a lemon and granulated sugar syrup.
The initial batter I made was a little thick as I neglected to realise how little liquid the clotted cream would contribute, so after adding a little more milk I produced something that flowed a little better in the pan. They baked to wonderfully golden brown, soft and moist, with a rich creaminess from the clotted cream. The lemon flavour is strong and tangy, imparting a flavour that is generally associated with pancakes.
