Broccoli, Chorizo and Manchego Quiche
I am a major fan of chorizo, so I have used some to make a quiche. This has a paprika spiced shortcrust pastry case filled with a mixture of broccoli, chorizo and manchego cheese, in an egg mixture with a little added parsley.
The chorizo is spicy and full of flavour, enhancing the otherwise fairly bland broccoli. The amount of manchego included is just enough for a strong taste and to add a moistness to the filling. The pastry was perfectly baked to crisp and crumbly and the quiche mix is smooth and absolutely delicious.
