Cranachan Cookies
To celebrate Burn's night I have merged the classic Scottish dessert, Cranachan, into cookies. These are filled with oats, a little honey, a dash of whisky and crushed raspberry pieces.
For some reason, whenever I make my cookies they don't spread as much as I desire. I think that they may require a little more sugar and more raising agent. But, this is my only complaint with these. They are crisp on the outside and have a soft chewy centre. The oats give a crunch in the mouth, the honey and whisky are subtle yet elevate the richness of the brown sugar, and the raspberries lighten the whole thing. They are absolutely delicious and really do a great dessert justice.
