Lemon Sherbet Swiss Roll
This swiss roll uses seasonal lemons but adds a little bit of childish fun, The sponge is flavoured with lemon zest and sprinkled with a little lemon sherbet before rolling. It is filled with cream whipped with lemon zest and a packet of lemon sherbet, drizzled with white chocolate and topped with candied lemon peel.
The sponge is light in texture and delicate with a lovely tangy lemon flavour. The flavour of the lemon sherbet in the cream adds a slighty 'zinginess' and strangely contributed to a whipped cream consistency with only one rotation of the whisk. It was a very odd situation, but saved my muscles! The chocolate drizzle and peel decoration makes a simple swiss roll look elegant and adds a touch of sophistication. Being a big fan of lemon I may be bias, but I think the flavour of the cake transports you to heaven and it is pretty much perfect.
