Kiwi and Lime Friands

These little cakes are the essence of the tropics. They are lime flavoured friands topped with a round of kiwi and dusted with icing sugar. 

The cake is moist yet light due to the high butter content and inclusion of only egg white. The lime flavour is strong and tangy, yet contrasts the sweet kiwi perfectly. My opinions may be a little bias due to my love of lime, but I think this is a great combination and a delicious bake.
