Cherry Tiramisu
This is an Italian tiramisu dessert made of layers of sponge fingers soaked in a mix of coffee and brandy, with mascarpone cream and a cherry coulis. It is all dusted with cocoa powder in the traditional manner.
I have to admit, this isn't what I intended to bake when I set out this morning, however for once the result is due to my choosing rather than something going wrong. Whilst I was whisking my eggs for my sponge fingers I made the decision that I should just make a traditional tiramisu rather than trying to be 'fancy' and building a complex construction. I am glad I did this as it is absolutely heavenly. The coffee is bitter and strong, with a background boozy kick. The mascarpone is creamy and smooth, and the cherry filling is a winning addition, adding a very welcome sweet and fruity flavour that cuts through the coffee. I would say this can't really be beaten.
