Lemon Meringue Parfait

This is my dessert for Mother's Day after a delicious fish pie! It is a lemon parfait served with homemade lemon curd and mini meringues.

The parfait was very lemony; it had a perfect flavour and texture. The meringues gave a crunch and the curd an extra tang. It was spot on.
