Cherry Chocolate Entremet



These are some entremet consisting of a chocolate striped joconde sponge, cherry and kirsch jelly, cherry mousse, chocolate ganache and chocolate shard.

The flavours all work beautifully together and in the end they turned out great. I did have a couple of issues with my sponge getting it into the mould (and having enough for whole strips). I found I don't have a spreader that removes enough decorative paste so it tended to crack a little. Other than that I am very happy. I think the decoration is perhaps lacking something but I don't know what!
