Chocolate and Pistachio Opera Cake




These are some chocolate opera cake slices. They feature a pistachio joconde sponge, dark chocolate underglaze, cranberry and cointreau soaking syrup, white chocolate ganache, chocolate creme au berre, white chocolate glaze, and a pistachio sprinkle.

The size of slice was perfect based on the richness of the flavours. Saying this, however, it is not sickly nor too sweet. The combination of different chocolates perfectly balance the flavours, and the subtle syrup taste coming through adds an extra hit that is very welcome indeed. I am very happy with how they look and especially how they cut.
