Salt and Black Pepper Picos
These are little Spanish breadsticks, made with both bread flour and semolina, risen by yeast and flavoured with cracked black pepper and sea salt.
When I was making the dough I realised there was a slight issue with my recipe in that the low gluten level in the semolina would mean they probably wouldn't really 'rise' like a normal breadstick. However, I don't regret putting the semolina in as the texture is crisp and crunchy. The black pepper and sea salt give an otherwise bland snack a lovely flavour. These are simple yet taste great.
