Banana Bread and Butter Pudding



I seem to have gradually made a collection of various bread in my freezer over the past few months, so I decided it was about time to use it up. I therefore made it into a bread and butter pudding. It is layered with banana slices and raisins with a vanilla custard and topped with nutmeg and demerara sugar.

The pudding is soft and custardy with just the right proportion of liquid and bread. The banana adds a lovely sweetness that makes a pleasant change from the normal version. The demerara sugar adds a great crunch to the top and makes it just that little more delicious. I really don't think you can beat a proper bread and butter pudding.
