Mango and Passionfruit Coconut Crisp
This dessert is basically a tropical crumble. It features chunks of mango mixed with passionfruit, and topped with a coconut and light muscovado sugar crumble topping. It is served cold.
The fruit is sweet with the two flavours working in wonderful balance to enhance each other. The crumble topping has a slight caramel undernote from the muscovado sugar, and a subtle coconut flavour. It is refreshing and light thanks to being served cold rather than hot like a traditional crumble. It is a dessert that makes you feel like you are on holiday in the Caribbean so you can forget about cold February days in the UK.
