Orange Blossom and Pine Nut Baked Ricotta



I absolutely love ricotta, so I have made a baked ricotta dessert. It is a little like a cheesecake, made with separated eggs, ricotta and cream cheese. The mixture is flavoured with a little orange blossom water and is sprinkled with pine nuts.

The dessert is smooth and creamy, with a subtle orange blossom flavour and slight savoury note, which I think tastes great, although it wouldn't be sweet enough for many. The pine nuts are buttery and taste great with the ricotta. I can't think of much better than warm cheesecake mix.
