Pancakes



There's only one thing to bake on Shrove Tuesday, and that is pancakes. As well as drizzling them in citrus juice and sprinkling them with sugar, these have a little lime zest in to give them that extra kick. They are simple to make and a must have to mark the start of Lent.

Recipe - Makes 10
  • 120g plain flour
  • Zest 1 lime
  • Pinch salt
  • 2 eggs
  • 300ml milk
  • 20g butter, melted
  • Butter, for greasing
  • Lime slices, to serve
  • Sugar, to serve
Sift the flour into a bowl and add the lime zest and salt. Crack in the eggs and pour in 100ml of the milk. Whisk to a smooth paste, then gradually whisk in the remaining milk to form a runny batter. Add the butter and whisk to incorporate. Cover with clingfilm and set aside for 30 minutes.

Heat a large frying pan over a medium heat and add a small knob of butter. Let it melt then wipe out the excess with a piece of kitchen roll. Use a ladle or large serving spoon to add a thin layer of batter to the pan, rotating it to ensure the batter covers the whole base. 

Cook the batter for 1-2 minutes to brown then loosen the edges gently and flip. Cook the other side until brown then tip out onto a plate. Repeat with all the batter. Serve warm with lime slices and sprinkled with sugar.
