Chocolate and Pecan Eccles Cakes



These are some especially unhealthy Eccles cakes. The have a filling of chocolate and pecans inside a flaky pastry, and are sprinkled with granulated sugar.

The pastry is crisp, light and flakes well, although did leak a little butter in the baking as it had large visible chunks remaining in it. I think it perhaps needed one more turn to incorporate it better. The filling is earthy, rich and indulgent, and makes a lovely alternative to the classic.
