Spiced Apple and Custard Dutch Tart



This bake is similar to something I saw in the supermarkets about a year ago, but hadn't got round to trying. It is a sweet shortcrust pastry tart filled with chunks of apple cooked in light brown sugar and mixed spice, topped with vanilla custard and a filo pastry top.

The pastry case is short, crumbly and well baked with just the right level of sweetness to complement the rest of the tart. The apple is well spiced and delicious with the custard. The filo pastry is crisp on top, but is a little soggy underneath where it was sat on the custard. I'm not sure how to overcome this in the method, but either way I think it is a pretty good bake.
