Amaretto Brioche Suisse
Brioche Suisse are French Viennoiserie, usually made from brioche dough filled with vanilla custard and chocolate chips. I have made mine from a very enriched sweet dough and added a little amaretto to the custard filling. I have kept the chocolate chips, using dark chocolate. They are glazed with a little apricot jam.
The dough has a perfect texture with a rich flavour from the high quantity of butter. The amaretto addition to the custard adds a delicious kick of almond and booze, and really marries with the slightly bitter dark chocolate well. I would say these are pretty much spot on.
