St Clement's Meringue Pie
This is a traditional meringue pie of shortcrust pastry filled with a lemon and orange curd filling and topped with meringue.
The pastry is light and crisp and the filling rich and citrussy. The merigue on top is lovely and brown with a soft chewy inside. The tart was almost perfect other than the slight spillage of curd down the side of the pastry case from the rise and fall of the meringue. Other than that, I am very happy. This is a proper meringue pie!
