Roasted Vegetable and Chicken Focaccia Base Pizza

This is a homemade pizza on a focaccia style base topped with oregano flavoured tomato sauce, mozzarella cheese, chicken and roasted vegetables.

The base was light and full of olive oil flavour due to the good rise and wet dough. It baked well, aside from the inevitable soggy middle due to lack of a pizza oven! The toppings were delicious and it was a great dinner!
