Lemon Meringue Mess

This is a quick dessert concoction using bits and pieces I have made and have left over. This is lemon parfait, meringues and lemon curd in the form of an Eton Mess.

The flavours were strong of lemon and the crunch of the meringues was a great contrast. It was superb for a speedy after work Sunday dessert.
