Rhubarb and Vanilla Bavarois
These are my little rhubarb desserts of a vanilla and rhubarb bavarois on a sponge base topped with pink rhubarb jelly, pink rhubarb jam, roasted rhubarb, honeycomb and rhubarb tuiles.
The bavarois set much better than my previous attempt and has a delicious vanilla flavour. The rhubarb is subtle but the addition of the bits on top can be tasted and works well with the other flavours. The honeycomb adds a crunch and sweetness and tops it off well. I am very happy with how they look and taste. I think they are little works of art.
