Strawberry, Almond and Orange Blossom Genoise Sponge.

This is a vanilla genoise sponge filled with homemade strawberry jam and a toasted ground almond and orange blossom water buttercream.

The sponge is light textured, the strawberry jam is fruity and the buttercream is sweet with a subtle hint of almond and orange adding an extra depth of flavour to the cake. This is a very nice take on a victoria sandwich.
