Pear Upside Down Cake
This is an upside down cake of a cardamom, almond and cinnamon genoise sponge, toffee pear topping and orange blossom buttercream decoration studded with caramel and pulled almonds.
This was an interesting bake. A rapid change in size of tin led to the sponge sticking and hence the sides falling off and it sinking. I decorated it to change it from a mess to a work of art. And the spiced flavours are declicious.
