Panettone Pudding

I have been making a bread and butter pudding comprising of a home baked panettone with a vanilla custard. The panettone was a brioche dough filled with raisins, cherries, apricots and blanched almonds.

The dough was soft and light and set well in the custard. It was a lovely winter pudding.
