Rhubarb Custard Tart.


I have made a traditional custard tart with a pastry made of ground almonds, rhubarb and a vanilla custard, topped with nutmeg.


This was remarkably successful bearing in mind it was a non-traditional pastry made solely of ground almonds and oil, and a custard made with soy milk. The taste was great and the custard was perfectly set. I am very pleased.
