Butternut Squash Filo Pie.


I embarked once again on filo pastry making two different pies. The left is a gluten free pastry filled with roasted butternut squash and red onion flavoured with rosemary. The right is a traditional filo dough filled with the butternut squash and red onion with some feta cheese.


The gluten free filo is interesting as it defies the whole principle of filo. But I made something that was delicious nonetheless. The traditional filo ended up paper thin and crispy and the fillings were great. I am very pleased with them both.
