Peach, Apricot and Orange Charlotte Royale.
For dessert I made a charlotte royale comprising of an orange swiss roll sponge filled with apricot jam and filled with a peach bavarois.
This was an interesting bake. The swiss roll took three attempts to reach my exacting standards but eventually I managed one with only a small crack. The bavarois posed a challenge using gelatine powder instead of leaves resulting in a requirement for turning this into a frozen dessert. Other than that it was great. The flavour needed a slight kick perhaps of raspberry, but other than that I am happy with how it looked in the end at least. I will be playing with gelatine more to get a properly set bavarois.
