Raspberry Frangipane Tarts



No afternoon tea is complete with some form of miniature tart, and I think these will work very well. They are sweet shortcrust pastry tarts filled with raspberry jam, almond frangipane, raspberries and sprinkled with flaked almonds. 

The pastry is short, crisp and light, with no soggy bottoms in sight. The frangipane baked to set but still slightly soft, just as it should be. I think the fresh raspberry flavour along with the perfectly balanced almond frangipane is heavenly. I think no summer afternoon tea would be complete without these.
