Chocolate Fudge Sponge Pudding



It doesn't get much more unhealthy than a self-saucing chocolate pudding, other than adding chunks of vanilla fudge. This is definitely a dessert for when you deserve a treat.

Recipe - Serves 6

For the sponge pudding:
  • 60g butter, softened
  • 60g light brown sugar
  • 1 egg, beaten
  • 100g self-raising flour
  • 25g cocoa powder
  • 45ml milk
  • 50g dark chocolate, melted
  • 75g vanilla fudge, chopped
For the sauce:
  • 25g cocoa powder
  • 75g light brown sugar
  • 125ml boiling water
Preheat the oven to 180C. Cream the butter and sugar in a bowl to light and fluffy. Add the egg a little at a time and beat to incorporate. Sift in the flour and cocoa powder and fold in, followed by the milk. Pour in the dark chocolate and mix in gently. Add the fudge pieces and fold in. Pour the mix into an ovenproof serving dish and spread to level. Set aside whilst you make the sauce.

Mix the cocoa powder and sugar in a bowl and pour in the boiling water. Stir to smooth then pour over the pudding. Bake for 25-30 minutes, or until the sponge is risen and springs back when pressed lightly and there is some sauce in the base. Remove and serve immediately.
