Malted Milk Custard Tart



I have been baking a traditional custard tart, featuring a sweet shortcrust pastry base, vanilla custard filling and is dusted with nutmeg. However, I rarely do boring so added a little malted milk powder to the custard to give it a slight twist.

I think adding the malted milk powder was the best decision I made when writing the recipe. It adds a deep malted flavour that elevates this from a plain custard tart to absolutely heavenly. The custard started bubbling in the oven and I was worried it had curdled but it turned out to have a perfectly smooth and silky texture. I think this bake is definitely a winner.
