Peppermint Iced Gems

I have been baking my version of a children's favourite, iced gems. They are plain little biscuits topped with multi-coloured peppermint flavoured royal icing.

Basically these look adorable and taste delicious, with a subtle yet not overpowering peppermint flavour to just add that little something extra. Better start packaging them up and putting them on the shelves!
