Mango and Passionfruit Caramel Eton Mess
Today's bake is one perfect to welcome the summer. It is a slightly different take on the classic Eton mess. There are layers of mango, crushed meringue, and a whipped cream and cream cheese mix. It is all topped with a drizzle of passionfruit caramel.
The flavours of this dessert are just the essence of summer. It is fresh, sweet and light, with the slightly savoury note of the cream cheese being a great addition. I had never made passionfruit caramel before, but I think it is a fantastic idea and tastes delicious, so I think I might be making it again. Watch this space!
