Goat's Cheese and Sundried Tomato Puffs.



These are one of my two puff pastry savouries for my mum's lunch at Ascot. They are topped with goat's cheese and sundried tomato pieces.

I have to admit, I didn't intend to bake these in this shape but I had a switch between the two fillings halfway through. This meant they didn't quite work as intended as the cheese melted a little too much and the centre puffed up so needed pressing back into place. So 5 minutes before the end of baking I decided to top them with another round of goat's cheese to give an extra boost of flavour and make them look that bit more appetising. I think this was definitely a good choice as I don't think they turned out too badly in the end! I think next time, however, I would look for a less soft and slightly crumblier cheese so it holds its shape a little better in baking.
