Peanut Butter Brioche Doughnuts

These doughnuts are an absolute treat for any peanut butter lovers. They are a brioche dough, fried, tossed in caster sugar, and filled with a peanut butter creme patisserie.

I'm not sure what to say other than that these are absolutely delicious yet horrendously naughty and unhealthy. The dough is rich and has a soft light texture. I think they may have proved for 10 minutes too long, or a little too much liquid was added, as the buns spread a little more than intended and a couple needed puffing out with the filling. However, the texture is perfect and once full of creme patisserie full of strong peanut butter flavour it can definitely be forgiven.
